Pickled Red Onions

Ingredients:

  • 2 medium red onions (thinly sliced)
  • 1 cup white vinegar (or apple cider vinegar)
  • 1 cup water
  • 1–2 tablespoons sugar (adjust to taste)
  • 1 teaspoon salt
  • Optional:
    • 1 garlic clove (sliced)
    • ½ teaspoon black peppercorns
    • ½ teaspoon mustard seeds

Instructions:

  1. Prepare the onions
    Peel and thinly slice the red onions into rings or half-moons.
  2. Make the pickling liquid
    In a small saucepan, combine vinegar, water, sugar, and salt. Heat gently until the sugar and salt dissolve (no need to boil).
  3. Pack the jar
    Place the sliced onions into a clean glass jar. Add optional ingredients like garlic or spices if desired.
  4. Pour the liquid
    Carefully pour the warm pickling liquid over the onions until they are fully submerged.
  5. Cool and store
    Let the jar cool to room temperature, then seal and refrigerate.
  6. Ready to eat
    The onions are ready in about 30–60 minutes, but taste even better after a few hours or overnight.
